Sometimes the simple things are the best and even moreso when you're camping although there are many who would ask "how would you know" and with good reason. My idea of camping is a 3 star hotel with a kitchenette and no WIFI. Lucky a single burner, a pot, a knife and a spoon are about all you need to make this quick and easy dinner.
I'm warning you though - it is far from gourmet and certainly not calorically responsible especially when someone who will remain nameless goes back to the pot for thirds, but no matter. It's a perfect meal when you're looking for a quick carb load and/or you aim to indulge your resident carnivore who happens to love the stuff.
Oh, in case you might actually be camping on this last long weekend of summer here's a few more good one pot dinner ideas for the ever so industrious camp cook.
Course that assumes you've brought along your computer and have wifi access in which case it proves you like to rough it about as much as I do... and no we're not camping this weekend. We're home on the Oregon Coast where some if not all the camp grounds are full, the Bay is crowded with boats and crabbers, and the Alsea River is floating a whole gaggle of wanna'be salmon catchers.
Creamy Cheesy Chili Mac (Inspired by Cooking Light)
1 tablespoon olive oil
1 large onion, chopped
1 pound lean ground beef
1 teaspoon garlic powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1 tablespoon chili powder
1 can beef consommé
1-1/2 cups beef stock or water
1 – 10 ounce can diced tomatoes with green chile (I used Rotel)
8 ounces uncooked elbow macaroni
1 pound Velveeta cheese, cut into cubes
In a large pot or sauté pan with lid, heat oil until shimmering. Add onion and cook until transparent. Crumble in ground beef and sauté until beef is no longer pink. Add garlic powder, coriander, cumin, and chili powder and stir well to distribute spices. Add consommé, beef broth and diced tomatoes. Bring to a boil. Add macaroni and stir well. Cook, covered for 8 to 9 minutes or until macaroni is done. Stir occasionally to prevent sticking. Add Velveeta. Remove pot from heat, cover and let sit for 10 minutes to melt cheese and thicken mixture. Stir well and serve. Makes 6 servings.
