We had leftovers last night for dinner; plates filled with turkey and all the trimmings and warmed in the microwave. I wonder why it always tastes better the second day. Anyway I can't tell you about dinner but I will share what we had for breakfast yesterday morning instead.
A chunk of Big Guy's home smoked salmon was left over from Thanksgiving's appetizer course (potato latkes with smoked salmon, chopped red onion and sour cream) and since I'd never had smoked salmon hash let alone made it, a breakfast challenge was in order.
Sorry, I can't give you a recipe because I didn't look one up or write anything down while I cooked but it's pretty simple. I added cubed Yukon Gold potatoes to a little butter/oil mix in a hot saute pan and when they were suitably browned threw in chopped anaheim peppers and red onion to the mix followed by chunky flakes of smoked salmon. Heated briefly and served in a bowl topped by chopped fresh parsley, salt, pepper for flavor and a few poached eggs, that was that.
Breakfast! Just so you know, I'd have it for dinner too except Big Guy doesn't do breakfast for dinner. Kinda' tragic isn't it to limit oneself in such a way.
