I went through a sausage making phase a couple of years ago. Need to bring that phase back!

You know June in high school, kids write in the back of the yearbook, "Don't ever change!" Well, that is my advice to you too, don't ever change. Dang you are spot on every time, reading my mind and telling me telepathically what I need to be making. I LOVE sausage, so why don't I make it more? That is about to change...sausage and gravy for breakfast, again I must asked, "Does the big guy know he is the luckiest man in the world?" From what I see and read, I'd say he does. Well wishes to you both!

I adore charcuterie - and your system of sausage making is spot on! I bet it is to die for - and sausage gravy over biscuits is one of my favorite things in this world - I keep a small - single size portion of the pork sausage in zippered bags in the freezer door for when I get the urge every couple of months! & Now I am there, again hehehehe!!!! Breakfast is so wonderful!

Ah Tom - I think we may be the perfect example of a mutual admiration society...I am such a fan of yours! As for that darned sausage gravy - can you believe we ate the whole pan? What gluts and yes, I think Big Guy might feel that way except for our current issue with "done lap" as in "da' stomach done lap over da' belt" Tee,hee.

Lea - Thank you and you're right, biscuits and gravy's addictive. We had more of the maple sausage for breakfast yesterday and if anything, it gets better. I'll be making it again PDQ.

Now that I have tried bacon making it is time to move on to sausage. The tips on mixing the pork with the seasoning will come in handy!

Takes so little time and it's so darned delicious. I'm almost ready to make another batch as it disappears rather quickly.
