I know you probably think I spend all day staring out the window at the ocean and dreaming about what sweet treat for the week I can come up with. Well you'd be right!
This one came about after I noticed the half used package of ladyfingers in the pantry and while I would have loved some tiramisu, I mean really who doesn't, there just weren't enough cookies in the package. Stealing from the theme of crunchy ladyfingers dipped in booze and smothered with layers of creamy sweet custard, I added banana slices and went one better by building our sweet treats in a jar - 8 of them to be exact.
There! Now you know what I do when I'm not staining shakes or staring out the window. Of course after losing my glasses in the ocean while helping Big Guy launch the boat yesterday, it'll be a bit before I do much of anything. Good thing I don't wear 'em when I'm on the computer, huh.
As for other dessert in a jar ideas, here ya' go. They are all delicious but I have to admit these brandy soaked creamy banana loaded ones are about the best yet - at least until next time.
Brandy Banana Pudding In A Jar an original from JBug’s Kitchen Antics
1 – 14 ounce can sweetened condensed milk (I used Eagle Brand)
2 cups cold water
1/2 cup half and half
1 – 6 serving size package instant vanilla pudding mix
1 cup whipped cream or whipped topping (I used Cool Whip)
3 small bananas sliced and dipped into juice from 1 lemon
16 lady fingers
1/4 cup brandy
Whisk sweetened condensed milk with water and half and half until well blended. Whisk in vanilla pudding mix and mix for 2 minutes or until really well blended. Refrigerate for 5 minutes. Fold in cool whip.
Meanwhile cut lady fingers to fit height of 8 – 6 ounce jam jars. Dip lady fingers as well as cut pieces into brandy and arrange in jars with small cut pieces on the bottom and longer pieces up 2 sides of the jar. Arrange a small spoonful of pudding in bottom of each jar and top with banana slices. Keep going in layers until jars are full, ending with pudding on top. Seal with lids and refrigerate for at least 2 hours before serving. Top with additional whipped topping. Makes 8 servings.
