Ever had curry on a salad? I'll admit last night was a rarity for us too. Almost more of a marinade than a dressing, the curry in this simple topper made from pureed apple really completes the flavors in this fabulous toss up of crisp dark green kale mixed with a little red cabbage, tart granny smith apple, roasted cashews and sweet dried cherries.
While the recipe from the Oregonian Cookbook called for dried cranberries, I substituted some of our home dried cherries because I thought they'd be incredible. They were!
The other great thing about the salad excluding the health benefits is the dressing has to be applied 30 minutes before serving, which makes it a perfect choice for entertaining because it holds beautifully and just gets better with time.
We had our salad with quick and easy chicken paillards - pounded boneless skinless chicken breasts, seasoned with curry, onion and garlic powders then dredged in flour and fried quickly in a little oil in a non stick pan but something off the grill would be wonderful too. Heaven knows it's darned near impossible to serve a meal around here without meat/fish or poultry of some kind because of the resident carnivore, but personally I'd have added a little goat cheese to the greens and been perfectly happy with the salad alone.
Kale Salad with Dried Cherries, Cashews, Apple and Curry from JBug’s Kitchen Antics adapted from Oregonian Cookbook, Best Recipes from Foodday
10 ounces kale
1/4 small red cabbage, finely shredded
1 cup roasted cashews
1/2 cup dried cherries
1/2 Granny Smith apple, unpeeled, cored and diced
Wash and dry kale and remove and discard tough stems. Coarsely chop and place into a bowl along with red cabbage, cashews, cherries and apple. A half hour before serving, using your hands toss salad with dressing – using your fingers to work the dressing into the kale leaves.
Season with salt and pepper.
1/2 Granny Smith apple, peeled and chopped
1-1/2 tablespoons apple cider vinegar
2 teaspoons honey
1 clove garlic
1 teaspoon curry powder
¼ cup extra virgin olive oil
Freshly ground black pepper
Place apple, vinegar, honey, garlic, curry powder, salt and pepper into a blender and mix well to puree apple. With the motor running, slowly drizzle in olive oil.
