What a sweet story, and what a great meal to celebrate it by. I am glad to see that you didn’t leave the southwest flavors behind when you left the southwest. Both dishes sound like ones I will be giving a try. I especially am interested in the “meatless” enchiladas…sounds interesting.

Lorraine - it was likely the mildest Mexican food I've ever made but good nonetheless. The enchiladas are great meatless but add a little chorizo and you're really on to something. Ha.

Yum on the food - All my favorites!! I love green pork chile so much!!!! The company was fab also - agh - nothing like the glow of young love at the table!

Lea - and not a red tomato to be seen unless you want to add one as a garnish. As for the young love, their happiness is truly contagious.
