This dip is more of a spread than a dip but that's about all the nit picking I can possibly do because it really is quite the deal. The only other thing that really bugs me is that I didn't think of it first. From myrecipes.com, this one is truly a man's kind of dip - loaded with crispy bacon, cheddar cheese, chives, black pepper and sour cream. Yup that's about it - all the toppings you'd normally load onto a baked potato, sans the butter of course.
It's as simple to put together as cooking up some crispy bacon and needs nothing but time in the refrigerator for all the flavors to blend. When I saw it on-line I knew we just had to have it and while they served their "dip" with crispy waffle fries I went one up on 'em and roasted some mini potatoes in a cast iron pan in a hot oven for 15 minutes. Sprinkled with coarse salt, they were soft pillowy explosions of flavor and completely opposite to the crisp jolt of kettle chips slathered in all the fixins that were on the tray with 'em.
I'll be doing a repeat of this one but in the meantime I'm thinking the leftovers spread on a nice crisp english muffin and toasted under the broiler might just be on the lunch menu. Anybody interested?
Loaded Baked Potato Dip (from JBug’s Kitchen adapted from myrecipes.com)
6 ounces bacon, cooked until crisp and chopped
1 – 16 ounce container sour cream
8 ounces freshly grated sharp cheddar cheese
1/3 cup chopped fresh chives
2 teaspoons hot sauce
Coarse ground black pepper
In a large bowl fold together bacon, sour cream, cheddar, chives and hot sauce. Garnish with a sprinkle of freshly ground black pepper. Cover and chill for minimum 1 hour to blend flavors. Serve with hot mini roasted potatoes, kettle chips or hot fries.

It's about as good as it gets and gluten free too (watch the labels on your cheese though and don't buy pre-grated cheese because there's something in it to keep it from clumping...just sayin'!)

Oh man, this is so going on my list. It has all the things you need...bacon, sour cream, cheese and potatoes, oh and did I say bacon. So yum!
