Boy sometimes I even surprise myself with my stupidity. Yesterday's shopping trip yielded some beautiful salmon steaks, all plump and glistening. The problem is I forgot how bony the darn things are even though the flavor's great. I really should have listened to the "look" I got from the Big Guy when I picked them up and bought fillets instead - but oh no. Sometimes I think I need to exert my independence but it's no surprise that I should have saved it for another time.
No problemo though because I'm thinking we'll be making this one again. Notice I use the term "we" - which is meant as a collective "we" since the Big Guy did all the work yesterday and cooked up the salmon. A recipe from Gourmet via Epicurious.com, the glaze is a combination of reduced maple syrup, lemon juice, soy sauce, fresh ginger and garlic. It's really simple enough but in combination with cedar smoke the end result is absolutely not to be believed.
The Mustard Mashed Potatoes, also from Gourmet via Epicurious are really the icing on the plate - creamy yet chunky unpeeled Yukon Gold potatoes, mashed along with butter, milk and Dijon mustard and paired with the salmon, it is without a doubt a match made in heaven. Who knew?

Beautiful looking fish. Planked fish is just the best and the maple glaze is on my list. What a nice change up for the potatoes;sounds so tasty.

Lea - you BETCHA' on both counts...and you know how much I love my taters. Thinking of making another mashed potato pie with the leftovers. Imagine how good that'll be!
