Well I think we've finally done it. Salmon's becoming a regular fixture around here and only because I've been persistent in my attempts to spice it up and make it interesting. We like it, we really like it.
Last night's version was oh so easy and brilliant I must say. Thanks to Gourmet Magazine, buffalo wings have morphed into buffalo salmon and I've gotta say I'm not sure why I didn't think of this myself. Ticks me off when that happens! The typical ingredients for making buffalo wings adorn the salmon fillet along with a sprinkle of panko crumbs for crunch. If you like buffalo wings, you're going to absolutely love this. It is delicious - wonderfully delicious with some of the sauce on the side...moist, flavorful, spicy, crunchy from the crisped up panko crumbs and generally just a huge surprise to the tastebuds. Who knew? We enjoyed it on top of some pan grilled baby broccoli with a few toasted walnuts and a cool throw in everything but the kitchen sink kinda' pasta salad.
