Dinner last night had to be easy cause because the cook was otherwise occupied. Max picked the day to dance the watusi again so gone were the plans for a 4 course meal...slight exaggeration on the number of courses, but something better was simply out of the question.
I whipped up what I call Hot Brown Chicken Burgers - ground chicken mixed with spices and parmesan cheese, then cooked on the flat top and served with bacon, sliced tomato and a smooth creamy cheese sauce for dipping. Nothing fancy - just good simple plain grub. We're rather fond of Kentucky's Hot Brown Sandwich so I figured the flavors would be just as good in burger form (I was right - again!) Ha.
What's a "Hot Brown" you ask? It's the ultimate decadent sandwich made from sliced turkey and served open faced along with pimentos, and bacon, all smothered in a cheese sauce. In the interest of a depleted kitchen, I left out the pimentos though I guess I could have used roasted red peppers, and I used ground chicken instead of turkey because it was $2.00/lb cheaper (what's with that?). We've a bunch of errands to run and he'll be ready to go as soon as he wakes up from another nap - his third this morning. The only thing is the big guy leaves tonight again to go back into the wilds until Saturday, so heaven knows what'll be cooking in JBug's Kitchen over the next couple of days. It's a mystery to all of us so you'll just have to stay tuned to find out.
