Last night's dinner of catfish and hush puppies was in honor of "Fat Tuesday". Guess the partying's over in NOLA now - how sad. For sure Emeril's version of fried catfish and hush puppies would be superlative party food.
As usual he didn't let us down last night. No siree. The fish took a swim in a marinade that was full of mustard, cajun spice, garlic and buttermilk before it hit the fryer and for darn sure it was worth the step. The end result was full of flavor, and perfectly moist with a super crunchy coating. The only thing is, for heavens sake don't use the full amount of salt in the recipe. I don't know what planet Emeril's on these days, but I'm not sure he's heard that us mortals don't use as much of the stuff as we used to. Whooee!
As for the hush puppies - hey, I admit I'd never made them before but I've been wanting to try them and I was singularly impressed. Make that two of us were impressed. The big guy loved 'em too. I only made half the recipe -moderation remember and I deviated from his recipe a tad because I used an Anaheim pepper instead of jalapeno pepper, only because I had it to use. These darn little nuggets of doughy goodness are delicious! Crisp, light as air, not greasy - what can I say. I'm hooked! I even made Emeril's recipe for tartar sauce, but shhh don't tell him. I think mine's better. Check out Emeril's recipe and see how easy it all is! You won't be disappointed.
Now, speaking of moderation - we still believe in it and fish is lower in calories anyway, right? We did keep the portions under control but I just had to make something to suit the day didn't I? Sounds like I'm trying to justify the fact that we're up a pound on the scale today. Oh well. Some time on the elliptical and a couple of good long walks with the Maxer dawg should take care of that little issue. Happy day everyone! We're aiming for 75 here today - time to open all the doors and windows and air the place out. Time to hose down the back patio too cause it must be spring. Which means tomorrow will be summer, the heat'll be on we'll be singing "we're off to Oregon". Oh wait a minute. That's not for another 4 months. Shooot!
