Yesterday I hinted at the fact that I was sick of the kitchen, though as soon as hunger hit that idea went out the window. Last night's dinner was one of those ready in 30 minute meals and really tasted like I'd fussed more than that. Step aside Rachel - you might just have some competition. I wish!
This chicken in orange Dijon sauce was a real hit with the big guy. I stripped the skin off some chicken thighs and browned them in a hot saute pan, added fresh orange juice (tangelo actually) and chicken stock and braised them for 15 minutes till they were done. Removed from the pan to languish for a minute, I added Dijon mustard, honey and hot sauce to the pan and reduced the sauce to a nice thick consistency before returning the chicken to the pan to keep warm. Served on a bed of rice with some frozen veg's foraged from the back of the freezer, dinner was ready in a flash. Other than complaining that I was trying to kill him with my choice of veg's the big guy said it was a real keeper. He really hates both green peas and beans, poor baby.
I picture broiling some chicken wings in the near future and coating them in the sauce. I think it would make an excellent Super Bowl nosh. Fortunately or unfortunately, depending on your point of view - I'll be alone this Super Bowl. Poor me.

You know all you'd have to do is hop on a plane and you could spend Super Bowl weekend with us! We could pretend to be watching the game while we drink wine and gab...LOL

There is a game this weekend???? Just joking - go Saints!!! Think I just might watch that one - I do have some wine... Lovely looking chicken dinner - I would love to eat that meal for sure!!!
