What is it about Saturday mornings? I remember the day when it was a morning reserved for sleeping in, then a long leisurely trip through the morning paper followed by a breakfast for champions. You know what I'm sayin'? Relaxing, quiet, orderly. Well not so much now that we're OLD. I mean, here it is going on 5:30 AM, still flippin' dark outside and we've been up for half an hour, awake for over an hour. The big guy's already marking papers, Max is antsy to get on a walk, Georgie's tormenting a desert packrat to death in the backyard and I'm sittin' here with my coffee and all of you. Ahhh, life in the fast lane.
It was a different story last night. The cook was lazy...really lazy. The recliners were beckoning, I had a book to finish and the big guy just wanted to veg in front of the television, so dinner needed to be a one bowl thing...quick to make, easy but memorable with limited groceries. In other words the cupboard was bare.
All the elements were in place for the birth of a new creation - Bacon, Leek, Tomato and Potato Chowder. Download BLTP Chowda' Hey sometimes the best things are born from necessity. I crisped up some pepper bacon in a medium saucepan, put it aside so I could pick at it while I made the soup, then added a leek, onion, potatoes, chicken stock and the rest of the milk I had hiding in the fridge. It tasted a tad bland, so I added some salsa and you know what? I think I'm on to something! Creamy, rich and spicy, with bacon undertones - ah, it was bliss in a bowl.
There's only one problem. Remember when I said dinner needed to be a one bowl thing - I lied. The big guy had three.
I actually have 7 slices of bacon in the oven right now that I was thinking of using for BLT's (for the 6th time in a week.) I'm off to make this for him for lunch. I love soups!

So great to hear from you. I missed you over the weekend & hope you had a wonderful time! This soup is darn tastie and a real surprise with the salsa, but just what it needed. I'm anxious to hear what you think of it.

OK, so I busted my behind to get this ready in time for hubby's lunch and he picks today to not come home for lunch. I thoroughly enjoyed this and will be blogging about it, hopefully later today.

Wow, you are quick. Can't wait to read what you think. The leftovers freeze really well, so hubby's in luck to have it some other time, and like most soups, it's better the second day. With some of that homemade bread of yours....ah man!
